A Love Letter To Matcha Pancakes

Simple dairy-free pancakes made from scratch, boosted with matcha (green tea) powder for a healthy twist and a vibrant green hue!

Ingredients
  

  • 1 ½ cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 Tablespoon sugar
  • 1 Tablespoon Matcha powder
  • 3 Tablespoons butter melted plant based for dairy free
  • 1 egg
  • 1 ¼ cup almond milk plain or vanilla
  • 1 Tablespoon vanilla extract
  • Cooking spray or similar

Method
 

  1. 1.        Mix together flour, baking powder, matcha powder, salt, and sugar in a large bowl.
  2. 1 ½ cups all-purpose flour,3 ½ teaspoons baking powder,1 teaspoon salt,1 Tablespoon sugar,1 Tablespoon Matcha powder
  3. 2.        Whisk in melted butter, egg, almond milk, and vanilla. Stir until well combined. Let batter rest for 5 minutes.
  4. 3 Tablespoons butter,1 egg,1 ¼ cup almond milk,1 Tablespoon vanilla extract
  5. 3.        Preheat a large skillet over medium-high heat. Spray with cooking spray (or use butter/oil as preferred). Pour batter into hot skillet, about ¼ cup of batter for each pancake.
  6. Cooking spray or similar                                                             
  7. 4.        Cook 2 to 3 minutes, until bubbles appear on the sides and center of each pancake. Flip and cook until golden, about 1 to 2 more minutes.

 This recipe makes approximately 10-12 pancakes. Nutrition calculations are estimated based up this being 4 servings.
